The riper the banana, the better
Put a mashed banana in the dough. The riper the banana, the better, because it gives the muffins an extra sweetness. If your banana doesn't look ripe enough to you, that is, not brown enough, there is a simple trick to speed up the ripening process: Put the unpeeled yellow or even green banana on a baking sheet and leave it in the oven at 120°C for about 20 to 30 minutes.
This will turn it completely black. After the baking time, allow to cool and then carefully remove the black peel. The soft flesh is now perfect for baking.
Make vegan “buttermilk” from plant-based drink and vinegar
Add a teaspoon of vinegar to the plant-based drink and let it stand for about 10 minutes. The liquid will curdle and create a kind of vegan “buttermilk”. This makes the mixture fluffy and gives the muffins a particularly fresh flavor.

What is the best way to store the muffins?
The lower carb granola muffins are easy to bake in advance. Packed in an airtight container, they will even stay fresh for a few days outside of the refrigerator. Or you can simply freeze them after baking. They will keep for several months in the freezer and can be quickly thawed when needed. Simply put them in the oven for a few minutes and they will taste like they were freshly baked.
