How is matcha made?
An elite club of tea farmers produce the tea in special shaded plantations. Shortly before the harvest, the tea is shrouded in darkness. In the dark, the matcha plant compensates by producing more chlorophyll. The leaf builds up more amino acids, which later results in a delicate, sweet taste.
The harvest of the fresh young leaves begins in April. These are transported to small tea factories as quickly as possible for further processing. In the factories, the leaves are treated with steam and then dried at up to 180 degrees. From the tea factory, they are sent back to the processing plant. There, the leaves are checked for quality and then combined to make “Matcha”.
The last step in production is grinding the tea leaves. This is done by hand with granite mills that can only manage 40 grams per hour. That's about one can of Matcha.
